Easy Hungarian "Feel Good" Soup!

This has got to be the easiest soup I make! If your feeling a lil under the weather..and can barely make it to the cupboard ..just pull out these ingredients and thrown them in a pot to stew for a big 30 minutes and you have some home made soup!

That was me the other day..wishing someone would drop me off a pot of soup..as I have done  many a time..but no one came..so I got really smart and dragged myself to the cupboard and made me some..It works! Try It!

Its a habit of mine cooking for other people when they are sick or just hungry..yall try it sometimes..and remember me when you do! ha ha ha !!

Good tidings friends and a Merry Christmas night! The end to a wonderful full day it has been.. and now this post of how I feel our cake has come full circle this Christmas 2011

It was....just ..a short time ago.. it seems to me ..

...this spring it will be 4 years ago...my mother was teaching me how to bake her cake so that I could carry on her legend. and handed me over her secret recipe that day in my little kitchen....little did I know just how short of a time it would be before I would be the only one baking her cake

Christmas Eve I baked my mother her cake and was very proud to do so..I think I made her the happiest I've ever seen her actually Her cake couldn't have turned out more perfectly,.she was proud to devour it on this beautiful Christmas morning. And a new surprise to her was the Apple Cake Ice Cream I made to go with it..you talk about awesome  wow!

day..Susan" Both her and Dad just closed their eyes and ate their cake and ice cream..I knew in my heart all the past few years..of trying my hardest and it hasnt been one lick easy...to carry on her legend  I ..had succeeded..after all..its said and done..I did it..I carried the cake full circle. I carried this cake several years to NC ..and fed all the people I could then I carried her cake to Kentucky and fed all I could and now Im back in Florida carrying her cake to her and Dad once again! I feel full..and happy that I did it!

I did it , I got Moms cake out there liked she had asked me to do..I even got Moms cake into several Fine Dining Restaurants in Asheville NC also in a Ice Cream Shop and on many Grocery Store shelves and got several rave reviews..Mom you can be rest assured that your cake now is famous and I thank God for guidng me to the right people who helped to do this..Its not over Mom its just beginning..one day Mom your cake will be sold by Williams and Sonoma, Neiman Marcus or some big outfit..you jus watch Mom..Im proud of you and what you have given me..and  I love you very much!

Roast Beef Spinach Provolone Spirals For "50" Bash Tonight!

These are quite tasty...I just tried one..its hard not to sample your own creation. I'm getting ready for a friends 50th birthday party today and whipped up some good ole roast beef with sinach,provolone and fresh horseradish sauce spirals. Then decided since I had made more than enough sauce..I'd decorate with some cut zucchini slices..yum.they will surely hit the spot!  Just like anyhting I make it just grows and grows..so now we have two platters  ha ha  ENJOY!

Sardine Yummies... Easy Protein Treat For Your Dog!

Stumbled upon this recipe in the Nov/Dec issue of AKC Family Dog Mag in a aticle.. Treat Levels by Kathy Santo.

Very pleased to say they work quite well..!! This treat allowed me to take my pup into a new command that I had been having trouble with getting her to do. Thank you Kathy !

SARDINE YUMMIES

INGREDIENTS

3 RAW EGGS

1 CAN OF SARDINES PACKED IN OLIVE OIL ( I purchased sardines in water then drained and added oilve oil)

1 PACKAGE (an inside sleeve not the entire box) OF GRAHAM CRACKERS

DUMP EVERYTHI NG INTO A BLENDER ( I used a food processor ) AND MIX UNTIL COMPLETELY COMBINED. POUR MIXTURE ONTO A COOKIE SHEET ( I used pan spray first on pan ) AND SPREAD OUT . BA\KE AT 350 DEGREES FOR APPROX. 20 MINUTES UNTIL IT LOOKS RUBBERY AND LIGHT BROWNED ON TOP. COOL THEN CUT .

If you use a metal spatula, you can pop the baked sheet right out onto your cutting board and cut to desired sizes. So easy!

I also processed my crackers first then added the eggs & sardines/olive oil next then continued to process...it came out very smooth that way and actually quicker!

They do not smell of sardines, they actually have a pleasant smell of grahm crackers. I cut them into bite size squares..perfect for just a lil treat for her! And most of all all my Labs just LOVE them!

Thanks Giving Love and Friendship

I was blessed this Thanksgiving weekend with plenty..  a bounty of beautiful Maple Leaf Farms Duck Breast was given to me by my good friend Peggy Souza. Thank yu Peggars! I love you!

I grlilled them over a open flame wood fire consisting of Austrailian Pine. which was given to me by my friend Rena Johnson whom helped me cut and haul it to the truck.

This was the first time I had ever grilled duck and oh what a joy!. The wood  flame seared the duck fat side down to perfection..and then a few minutes on the other side and they were completely beautiful.

Afterwards I let them sit and regather their juices , then sliced and served over some basmati brown rice and topped  with a nice plum orange seagrape reduction..wow..I impressed myself acutally!

Rena came to have a late lunch with me at my home...so nice to have a friend over to eat!

I had cut up and cooked some great swamp cabbage on Saturday and made a Tomato pie on Friday so we helped ourselves to those also..it all overwhelmed us both as we ate and chatted..it was fun! We were so full we had to part our ways,say our goodbyes and left the Sunday afternoon to itself.

I know I went to bed early and slept very well.. ..Rena prolly did too!

Thanks to you both Peggy and Rena for ending my Thanksgiving in a wonderful way!

This time of year those beautiful wind barrier plants usually propagated along sea shore areas are dropping purple berries! Ive always wanted to jar up some of the old timers secret delicacy and this year I did it!

   
On our early morning walks it was hard to resist the aroma of them ripening..so we started picking..and picking..and picking. This being my first attempt..I did not know how many we needed for a few pints of Jam ..or even if I could make it..so we first picked us about 2 gallons of berries..mind you they are above our heads and falling on the ground as we picked!..
Got in touch with my friend Peggy asking if she had the secret recipe..Grandma Summerlin's Sea Grape Jelly...and by golly she did!..I had already decided if I was lucky enough to get it..I was going to make a jam instead of a clear jelly..me..I just love Jam!
The directions were vague to me..Id never done this before so any would be...but precise enough to start my journey.

A few years ago I lucked into my great neighbor's carport sale and she sold me a lot of her old timey jelly making things..old china caps..a stand..some awesome old mallet jabbers thingys..I was good to go..Thanks PollyAnn! I knew one day I would be doing this just didn't have any idea when! She is a "Summerlin" also..married into to a Moore.
Well..washed up all of my berries..covered them with water..and boiled them..like half a day..Im serious!

Let them cool..then thought okay..I need to get some good stuff out of all of this..and started plopping big spoonfuls into my china cap and stand with a bowl under to catch the stuff..wow..I was getting some pretty good stuff coming out of there..tasted it..it was sweeeeeet! yum! I knew it was gonna be a good thing now..just how did I get this too a jam stage I did not know!
I had done enough..maybe 8 hours to the good now so I stored up my juice about a gal of rich deep purple pulpy juice in the fridge. Tomorrow will be the day I said!

And it was..picked some fresh key limes off my tree out back..squeezed them up..one of the requirements of the recipe..and started making jam..actually taught myself..how to do it..never did see a sheeting action..just boiled and boiled and stirred and stirred until I thought it was stiff enough to jar up..hoping it would solidify later..and it did..the first batch was a little stiff..but after a few weeks now..by golly I think I got it down pat.
Now I have been distributing a few jars of Sea grape Jam to the ones who are responsible for my accomplished feat.without them..I would have not been able to do this..Peggy my firend who gave me "the" old recipe,Grandma S's son Herman, Polly Ann, Barbara S. Veronica my friend who is fighting cancer with hopes it will heal her and of course my friend Brenda who patiently picked Sea Grapes with me for the past few week!

I sure wish Grandma Summerlin was still here,she would be proud of me I think..we got along quite well..in the day. Bless her soul she was a good woman!

She once gave me her mulberry cake recipe. it was kinda of vague also...I made it for her grandsons 30th birthday party which she attended also..here at my home.
Guess the reason I've never made it before was..the grapes ripen the same time apples do and Im usually in NC making our ORIGINAL Mrs Millers Apple Cakes this time of the year..it was good to do something worth while here this year! Thanks all yall...ENJOY!


 

Happy Birthday Mom!

Mom and I celebrated her 82nd birthday yesterday ! We went out to lunch and had a big time! After dining on a great country vegetable plate..we slurped up some good ole blackberry cobbler..
Thanks Cracker Barrel for showing my mother a good time..we sure do enjoy your vegetables, hospitality, super good service and awesome gift shop..its one of Moms favorite spots..even got her to try on one of yall's hats for a picture!
It meant the world to me and her both! I love you Mom!
